Apple Braised Salmon w/Spinach
serves 4
Ingredients
- 4 ea salmon fillets
- 1/2 C dry white wine
- 1 C apple juice
- 1 T balsamic vinegar
- 4 T butter
- 4 C fresh spinach
- 1 ea apple, julienned
Instructions
- Cook the salmon using your preferred method to your preferred doneness.
- While the salmon is cooking, bring the wine, juice and vinegar to a boil and reduce to 1/2, then melt in the butter to form a sauce. Season to taste.
- Toss the spinach in the sauce, then plate the spinach, top with the salmon, and garnish with the apple.
- Plate and serve.
